Today, I want to take you on an exciting journey through the world of food innovation and sustainability. Meet Plant-Based Eggs, a miraculous alternative that isn't laid by chickens. 🌍

A year ago, we, the Food Bureau of Innovation (FBI), were presented with a fascinating challenge by none other than Kipster, the most human-, environment-, and animal-friendly chicken farm in the world (de Volkskrant). πŸ” But Kipster wanted to go even further.

Why? Let's take a look at the chicken factory: grains, seeds, and by-products, such as bread, go in, and eggs come out. This transformation in the chicken factory is inefficient because we could also eat these nutrients directly, resulting in less food, water, and energy being wasted. πŸ’‘

Why not make a plant-based egg directly and more efficiently from the same raw materials that the chicken eats? The challenge: to develop a Plant-Based Egg that resembles a chicken egg in terms of nutritional value and taste. And the best part is, we proved it can be done! 🌾πŸ₯–πŸ«›πŸ₯š

We got to work with proteins from legumes and seeds, and created the texture using plant-based thickeners from seaweed, roots, and everyday kitchen ingredients like cornstarch, potato, and wheat flour. The taste? We achieved that with extracts from natural plants and a little magic from FBI. πŸͺ„πŸŒΏ

But don't be fooled, it was far from easy. After a year of hard work and over 150 tested recipes, we succeeded in creating a hard-boiled, fully plant-based egg that is almost indistinguishable from a real chicken egg. 🍳

The reactions from our blind taste tests? Pure wonder and genuine amazement. 🀩 We are committed to making this available to everyone together with Kipster. As a hard-boiled plant-based egg or incorporated into salads and other products. We are now working hard on optimization and market introduction, so that this groundbreaking product will be available in all sustainable supermarkets and restaurants in the future.
