😍There is much more dietary fiber in plant-based meat substitutes or bread than is often stated on the packaging! 🍔 🍞
Many of the measurement methods used by the industry are based on a general standard nutritional measurement that is carried out by the various food labs. However, the standard measurement (often AOAC 985.29) only measures the long-chain dietary fibers (including cellulose and hemi-cellulose), but not the short-chain dietary fibers such as inulin from chicory and vegetable gums from pods or seaweed (such as xanthan gum, carrageenan, agar-agar, etc.). A new method for this is the AOAC 2009.1, which does include these short-chain dietary fibers. This is useful if you want to score better/higher in the new @Nutriscore. 🚥 📈 🎉
